Sami Cuisine: A Scandanavian Menu That's All About Reindeer Meat


When you think of Scandinavian food, you may picture comfort stews, tasty fish meals, and sweet pastries. However, Sami cuisine focuses on the culture and customs of the indigenous Sami people in the north and it showcases one unexpected ingredient as its key element: reindeer meat.

For centuries, reindeer have played a vital role in the lifestyle of the Sami people. Nomadic herders depend on them for food, clothing, and travel in the expansive Arctic regions, making reindeer meat a key component of their traditional diet and culture.

Sami cuisine highlights the versatility and appealing taste of reindeer meat through various dishes. A popular example is "Bidos," a traditional stew made with reindeer meat, potatoes, carrots, and onions, cooked slowly over a fire or stovetop for a hearty meal. As with many other Scandinavian dishes, Bidos is prepared warm and made ideal for staying warm in winter.

Another well-liked option is "Suovas," thinly cut and smoked reindeer meat commonly enjoyed cold as a snack or starter. Smoking not only keeps the meat fresh but also adds a distinct, smoky taste characteristic of Sami cuisine.

Reindeer herding is crucial to the Sami way of life. The Sami people prioritize sustainability and ethical treatment of animals, deeply tying their practices to their respect for nature and the animals. Herds are carefully managed to protect reindeer well-being and the Arctic ecosystem.

Reindeer meat is both tasty and healthy, being leaner than beef and rich in protein, iron, zinc, and vitamin B12. The Sami people rely on it for sustenance and energy due to their demanding lifestyle in harsh environments.
